Mini Apple Brie Turnovers

We are still on an apple kick around here. All last week we shared a bunch of delicious apple recipes, including our favorite: caramel apple slab pie (you’re gonna want to pin that one…this one too, but that one for sure!). With apples in season, we need to put them all to good use, and today’s recipe for mini apple brie turnovers is a keeper.






We shared a similar recipe to this one two years ago: apple brie tarts which calls for phyllo dough. This recipe uses puff pastry. Both are great, it just comes down to your preference. Isn’t it amazing how easily accessible things like puff pastry and phyllo dough are to all of us in the freezer section of the grocery store?!





One of the best benefits of all these apple recipes is that we get to use the coolest gadget ever! The apple slicer-corer-peeler thing-a-ma-gig. Don’t you just love that thing? My kids always love to help me in the kitchen when I use that thing






I’ll share the full recipe below, but once you thaw and roll out the puff pastry, the assembly is easy.





Mini Apple Brie Turnovers


Ingredients

1 box Puff Pastry sheets
4 apples peeled and cut up
⅓ cup sugar
1 tsp. cinnamon
¼ tsp. nutmeg
½ cup water
one package brie cheese

Glaze

1 tablespoon butter
2 tablespoons milk
1 teaspoon vanilla

powdered sugar (desired amount)

Instructions

Thaw frozen puff pastry. Put apples in saucepan with ½ cup water, sugar, cinnamon and nutmeg and simmer for 20 minutes, stirring until apples are tender. Let cool.

Cut strips of puff pastry and then cut them into small squares and then cut the squares into triangles. Put a small amount of apples on each triangle of pastry, then a small slice of Brie 

Cheese. Seal 3 sides leaving one open.

Bake at 400 for about 20 minutes or until nicely browned.


Cool slightly and drizzle with the glaze made with 1 TBL. butter, 2 TBL milk, 1 tsp. vanilla and enough powdered sugar to make a nice glaze.
