SUNSHINE SALAD RECIPE – My daughter Jersey is most excited to try this because it has sunshine in the title.

One of the hardest parts of keeping your weight where you want it is controlling the urge to snack. At the end of the day, I want something sweet to snack on that isn’t going to totally destroy my diet. Since I lost 40 pounds on the Weight Watcher’s plan, I often try to incorporate their recipes into my family’s meals. That way we can all eat one meal and I don’t need to worry about making two meals.




Sunshine Salad is a fruit salad that is 2 Weight Watcher’s Points Plus per one cup serving. If you’re familiar with Weight Watchers, you’ll know that fresh fruit has no points plus. The 2 Weight Watcher’s Points Plus in this recipe are coming from the Sugar Free Vanilla Pudding and the Mandarin oranges in light syrup. You could substitute fresh orange sections and drop the Points Plus down to 1 if you want. You can also add in other fresh fruit like grapes if you have them.





Sunshine Salad

ingredients:

  • 1 fresh pineapple, cored and cut into chunks
  • 1 15 oz can of Mandarin oranges in light syrup
  • 2 bananas
  • 1 box of Jell-O sugar free instant pudding

directions:

  1. Do not drain the oranges. Cut the pineapple and bananas into chunks. Combine the fruit in a large bowl. Sprinkle the dry pudding mix (do NOT add milk) over the top of the fruit. Mix well. Refrigerate, covered for at least one hour. Serving size is one cup.



Sunshine Salad - A delicious fruit salad that is only 2 Weight Watcher’s Points Plus per one cup serving.
